Carrot gnocchi (by pastalpesto_ch)
Ingredients
- 455g carrots
- 270g flour
- Salt (as much as needed)
- Olive oil
- pesto / tomato sauce / butter and sage
Method
- Peel the carrots, cut them into pieces and steam them / in boiling water about 15 min until soft. Then mash them well with a fork or something else.
- Then add the flour and salt. Be careful not to put in too much flour. Knead with your hands until you obtain a dough ball.
- Divide the dough into smaller portions and roll them out with your hands until you obtain rolls. Then cut the gnocchi as desired.
- Cook the gnocchi in boiling, salted water. When they come to the surface, drain them and serve them with the sauce of your choice. Enjoy.
