SUMMER SAVOURY PIE
Ingredients
- 1 roll of puff pastry
- Vegetables: 1 leek, 1 onion, 1 courgette, 1 pepper, 1 carrot
- 2 eggs
- Oats q.b.
- Parmesan cheese q.b.
- 3dl crème frèche or Philadelphia cheese
- Salt & pepper q.b.
- Nutmeg q.b.
Method
- Cut the leek and onion and fry them on a low heat, then add all the previously diced vegetables, season with spices and cook until soft (approx. 10-15 min).
- Then remove everything from the heat and leave to cool for a moment. Put everything in a bowl and add the two beaten eggs and the Philadelphia cheese.
- Now lay the puff pastry in an oven dish and, after poking holes in the centre, pour in some oat flakes. Take then the vegetable mixture and pour it on top, spreading it evenly over the entire pastry. Cover with Parmesan cheese or breadcrumbs to make a crust.
- Bake the pie in a static oven at 210ºC for 35/40 minutes.
